Pasta is one of the food
that comes to my mind when I want to quickly whip something up for everyone
including the kids, when I’m not thinking noodles or “raash”(as my 2-year old
would pronounce rice) and of course when I’m thinking healthy meals too. Kids
love pasta and it is also a good choice meal for the whole family, be it lunch
or dinner.
Pasta has a unique
delicious tangy taste and takes a few minutes to prepare. This pasta recipe is a no- tomato recipe (it's no news that tomatoes are now very expensive in Nigeria). Another great thing
about this recipe is that the pasta is tossed in a stir-fry with various other veggies
to create a nutrient filled healthy meal.
Use your choice vegetables to suit your family’s taste and preference, you can
even use beef or turkey in place of chicken.

Try out this simple recipe
for the kids this #Childrensday, the dish has so much flavors that appeal to
kids.
Ingredients:
Pasta
(comes in various shapes; Spaghetti, Macaroni). For this recipe, I used Slim Spaghetti
(a.k.a. Angel hair pasta).
Onions
Garlic (optional)
Carrots
Green/Red bell pepper
Cabbage
Stock cube
Chicken (boiled)
Oil (you can use Olive oil
or Vegetable oil)
Salt to taste
Preparation:
1. Cut
the carrots and cabbage (I grated the carrots and cabbage so it easily blends
with the pasta), chop the onions, garlic, peppers and cut chicken into strips.
2. Boil
some water in a pot, add salt and cook the pasta according to the directions on
the package. Drain and set aside.
3. Heat
a non-stick frying pan or wok over medium heat and add some oil, add the
chopped garlic and onions and stir fry for a few seconds. Add the chicken, and
stir for 4-5 minutes, then remove chicken and set aside.
4. Add
the peppers to the frying pan and stir for 2-3 minutes. Add carrots, cabbage, and
any other veg of your choice (green peas, broccoli, runner beans, e.t.c). Add
the stock cubes and continue stirring for about 2 more minutes, remove and set
aside.
5. Put
the pasta into the frying pan and stir-fry for 2 minutes, then add the
vegetables and chicken, stir together over medium heat for a few more seconds and remove from heat (We still want
the vegetables crunchy).
If you want the Chinese
kind stir fry (Chow Mein), it’s simple to make the sauce; Ingredients are:
Chicken broth (or just add
some chicken stock cubes in some water)
Corn Flour (available in
most supermarkets)
Light Soy sauce (low salt)
Brown sugar (optional)
Mix all these ingredients
together in a small bowl. Add mixture to No.5 above and stir for a few seconds
over heat till sauce thickens. Then Serve and Enjoy!

Tips:
1. Cutting
the vegetables take quite some time, you can opt for the already cut frozen
vegetables (available in supermarkets).
2. Include
more vegetables in your family meals, instead of serving Plain rice/pasta with
only sauce; add cut carrots and green peas or any other veg of your choice.
